FIGS IN A BLANKET
(puff pastry, stuffed with fig, goat cheese) – yield 12

Ingredients:
3 tbsp Honey
2 tbsp Red wine vinegar
4 Gin-gin ginger candy
6 Figs halved, stems removed
4 oz Goat Cheese
1 box (17oz) Puff Pastry
1 Egg (plus 1 tbsp water for egg wash)
1 med Sweet Onion
Quinoa Seeds

Directions:

Pre-heat oven to 400f

Line baking sheet with parchment paper

Caramelize onions – set aside

Make reduction sauce – honey, red wine vinegar and ginger candy; reduce sauce to desired concentration.

Soak halved figs in the reduction sauce

Cut Puff Pastry into 1/6 strips (should end up with 12 in total)

Place halved fig into pastry strip, add scoop of goat cheese, add caramelized onion, roll to enclose, seal ends with egg wash, transfer to sheet pan (seam side down), baste top with remaining egg wash, sprinkle with quinoa seeds

Bake for 20 minutes

Plate your Figs in blanket and drizzle each with remaining reduction sauce
