Brad’s Christmas in April Quinoa Figgy Pudding w/Gin-Gins Glaze

• 1 ¾ cups buttermilk
• 15 dried figs, chopped
• 1 ½ cups white whole-wheat flour
• 1 cup white sugar
• 2 ½ teaspoons baking powder
• 1 teaspoon ground nutmeg
• 1 teaspoon ground cinnamon
• 1 teaspoon salt
• 3 eggs
• 1/2 cup dry bread crumbs
• 1 cup cooked quinoa
• ½ cup butter, melted
• 2.5 ounces sliced almonds
• 3 tablespoons orange marmalade
• 1 tablespoon grated orange zest
• 10 gin-gins candies

Figgy Pudding

• Step 1
Gently heat buttermilk and figs in a saucepan over medium-low heat until softened, 12 to 15 minutes; set aside until cool.
• Step 2
Preheat oven to 350 degrees F. Grease a tube pan.
• Step 3
Sift flour, sugar, baking powder, nutmeg, cinnamon, and salt together in a bowl.
• Step 4
Beat eggs in a large bowl with an electric hand mixer on high for 1 minute. Add fig-and-buttermilk mixture, bread crumbs, quinoa, butter, almonds, orange marmalade, and orange zest to the beaten eggs; beat on low speed until blended. Gradually add flour mixture while beating until JUST incorporated into a batter. DO NOT overwork. Spoon batter into prepared pan. Grease a sheet of aluminum foil; use to cover pan.
• Step 5
Bake in preheated oven until firm and pulling away from sides of the pan, about 1 hour 20 minutes. Set aside to cool for 10 minutes before removing from pan. Top with Gin-Gins Glaze (see Below) and WHIPPED CREAM! <------VERY important (make your own or store bought) Directions
GinGin Glaze

• Step 1
Unwrap 10 Gin-Gins candies and place them in a small saucepan.
• Step 2
Add a quarter cup of water and heat on medium until Gin-Gins are dissolved and it begins to boil
• Step 3
Bring to a simmer for another 5 minutes stirring constantly. If it is too thick add a small amount of water more, but you want to keep it from being too runny.
