Cornmeal Cake with Grapefruit and Basil Glaze

Ingredients:

Cake

  • ½ cup olive oil
  • 2 eggs
  • 1 cup sugar
  • ½ cup grapefruit juice
  • 1 ¼ cup all-purpose flour
  • ½ cup cornmeal
  • 2 tsp baking powder
  • 1 tsp salt
  • Zest of 1 grapefruit
  • Grapefruit slices (optional)
  • Basil leaf (optional)

 

Glaze

  • ¼ cup half and half
  • 3 tbs chopped basil
  • 4 small chunks of pink cotton candy
  • 2 tbs grapefruit juice
  • 1 tsp grapefruit zest
  • Pinch of salt
  • Powdered sugar

 

Directions:

  1. Preheat oven to 375 Fahrenheit
  2. Brush cake pan with oil, line with parchment paper, brush paper with oil
  3. Whisk eggs, oil, sugar, and grapefruit juice. Add flour, cornmeal, baking powder, salt, and zest
  4. Pour batter into the pan
  5. Bake for 35-40 minutes
  6. Let cool completely

 

  1. Add basil and half and half to microwave safe bowl
  2. Microwave for 45 seconds, let cool for 5 minutes
  3. Remove basil
  4. Add rest of glaze ingredients
  5. Drizzle over cool cake
  6. Dust with powdered sugar
  7. Garnish with basil leaf and grapefruit slices (optional)
