Cornmeal Cake with Grapefruit and Basil Glaze
Ingredients:
Cake
- ½ cup olive oil
- 2 eggs
- 1 cup sugar
- ½ cup grapefruit juice
- 1 ¼ cup all-purpose flour
- ½ cup cornmeal
- 2 tsp baking powder
- 1 tsp salt
- Zest of 1 grapefruit
- Grapefruit slices (optional)
- Basil leaf (optional)
Glaze
- ¼ cup half and half
- 3 tbs chopped basil
- 4 small chunks of pink cotton candy
- 2 tbs grapefruit juice
- 1 tsp grapefruit zest
- Pinch of salt
- Powdered sugar
Directions:
- Preheat oven to 375 Fahrenheit
- Brush cake pan with oil, line with parchment paper, brush paper with oil
- Whisk eggs, oil, sugar, and grapefruit juice. Add flour, cornmeal, baking powder, salt, and zest
- Pour batter into the pan
- Bake for 35-40 minutes
- Let cool completely
- Add basil and half and half to microwave safe bowl
- Microwave for 45 seconds, let cool for 5 minutes
- Remove basil
- Add rest of glaze ingredients
- Drizzle over cool cake
- Dust with powdered sugar
- Garnish with basil leaf and grapefruit slices (optional)
